My first crack at a Kale Salad. Last week I took a cooking class at Williams-Sonoma and we made some great food. I decided to take the training wheels off tonight and give it a shot without the teacher. I decided to make the Kale Salad and here is how it compares to the one we made in class.

Room for Improvement. My kale salad turned out pretty good but there are a few tweaks I'd like to make. My apples were a little off and the vinaigrette was just a little too sweet. Overall though I think I found a salad using kale I actually enjoy.
My weekend plans. There are a few things I'd like to do this weekend to consider this week a success.
- Lower Body Workout Tomorrow Morning- I've worked out every day this week and I got one more to go in the morning. Sunday will be a complete rest day.
- Continue to Eat Clean- I'm jumping on the scale on Sunday and I want to see 2 plus pounds of weight loss so I can't go and ruin all my hard work by having a pizza on Saturday night. If all goes well I'll probably reward myself with a big steak Sunday night!
- Go Ice Fishing and Catch Some Fish- Ice fishing is my favorite thing to do on this planet. We finally have some cold weather and ice so I'm going to take some time for myself and see if I can catch some fish.
- Watch some great football. OK so this weekend is definitely shaping up to be my kind of weekend. Ice fishing, playoff football and a Sunday steak. I can't ask for anything more!!
Kale is one of those leafy greens I still need to give a shot. I hear nothing but goodness about it! Good luck with your weekend plans:)
ReplyDeleteThanks Leigh! I was a little intimidated by it using it in a salad but now I'm hooked.
ReplyDeleteI haven't been able to embrace kale but your salad looks great!
ReplyDeleteI tried kale a few months ago and thought never again. It wasn't until I took my cooking class where I discovered it could actually be good.
