Random Tuesday Thoughts

Give credit where credit is due!  Here in Michigan it felt like we were in a mini ice age today. Temps with the wind made it -5 degrees out. The only run outside I got in today was running from the parking lot into the gym. On my way home from work though I saw someone running out in this arctic mess. Today I salute him for being a stronger man than me!

Another reason to lose weight.  April 5th will be my 5 year wedding anniversary and my wife and I have decided to celebrate it big. We're going to take a week vacation somewhere warm either at a resort or on a cruise. This will be an extra layer of motivation to keep shedding the weight. Would love to be able to take my shirt off and actually feel comfortable in my own skin.

I've been celebrating roasted vegetables.  For roughly the last week I've been roasting vegetables to go with every dinner. One of the most easy and tasty ways to eat vegetables is roasting them in the oven. All I do is drizzle some olive oil on them and add salt and pepper and bake. I've tried broccoli  asparagus, green beans and cauliflower. Anybody have another favorite?

PS-My wife is doing great on the Run 5k program. Currently she is on week 3 and seemed to handle the increase in intensity well today. I remember when I was in the beginning weeks of the program I had weird aches everywhere.

  1. Your anniversary trip sounds awesome! I LOVE roasted veggies and eat them all the time....high oven temp to make them dark and crunchy... I also add sweet potato chunks, crushed garlic in with the olive oil and fresh chopped cilantro when I have it. AND you have to try zucchini and yellow squash with the others too...also whole mushrooms. YUM!

    Yay to wife...she's making progress.

  2. I love roasting root veggies in the oven too. Carrots, parsnips, beets, turnip...that kind of thing! Same drill. Olive Oil, salt and pepper. YUM!

  3. I can't imagine that person running in -5 degree weather either. That is dedication! Sounds like you are doing great. The thought of a warm vacation later this year sounds very appealing!
